Use .srt for YouTube, Premiere, Final Cut, DaVinci and most players — it is the one that is accepted everywhere. Use .vtt for captions on a web page, which is the format the HTML <track> element expects.
Most editors and platforms take the file directly — in YouTube it is Subtitles → Add → Upload file. Keeping subtitles as a separate file rather than burning them in means viewers can turn them off, and search engines can read them.
They are segment-level and usually land within a fraction of a second, which is fine for captions. For frame-accurate subtitling you will still want to nudge them in an editor — every automatic tool has this caveat, including the paid ones.
